Make Ahead Vegan Chipotle Burrito Bowls

OK, this recipe has a lot of moving parts but don’t let that scare you, it is totally worth it! I personally love Chipotle and their company values, but the less I eat out, the more odd it tastes. Making these kinds of things at home is easy, and affordable.

Shopping List

  • Rice (white or brown)
  • 2 limes
  • 2 bell peppers (whatever color you like) (thinly sliced)
  • 1 large yellow onion (thinly sliced)
  • Fresh cilantro
  • 1 jalapeno (2 if you like things spicy)
  • 1 red onion
  • 1 tomato
  • Head of romaine lettuce
  • 1 large can of sweet corn
  • 1 bag dry black beans (or canned to make things easier)
  • 6 cups of vegetable stock
  • Spice blend of chili powder, paprika, cayenne, cumin, oregano, salt, and pepper

The Make-Ahead Part

┬áPart 1 – The Warm Stuff

Once all ingredients are prepared, assemble in a jar in the following order from bottom to top:

  1. 1/2 cup of rice
  2. 1/2 cup of fajita veggies
  3. 1/3 cup of black beans
  • Cilantro Lime Rice
  1. Cook rice according to package directions, if making this just for one person you’ll only need one recipe.
  2. Add the juice of one lime and 2-3 tablespoons of cilantro once rice is cooked
  3. Set aside
  • Fajita Veggies
  1. Slice bell peppers and onions super thin
  2. Saute in olive oil (or oil of choice) until veggies are soft
  3. Mix spoonful of spice blend with 1/3 cup of water
  4. Add liquid to veggies until liquid has reduced
  5. Set aside
  • Black beans
  1. Pour 1 bag of dry black beans into your crockpot
  2. Pour 6 cups of liquid (veggie stock or water) into the crockpot
  3. Add a palmful of spice blend
  4. Cook on high 6 hours
  5. Turn to low for 2 hours

Part 2 – The Cold Stuff

Once both parts are prepared, put 1/2 cup of corn salsa and 1/2 cup of lettuce into a container

  • Corn Salsa
  1. Drain and rise canned corn, pour into a bowl
  2. Finely dice red onion and jalape├▒o and add to corn
  3. Seed and dice tomato
  4. Chop and add 3 tablespoons cilantro
  5. Squeeze juice of 1 lime into mixture
  6. Add salt and pepper to taste, set aside
  • Lettuce
  1. Finely chop lettuce, set aside

Eating Day

  1. Place rice, beans, and fajita veggies in microwave for 30-45 seconds (just to get the chill off)
  2. Top with corn salsa, lettuce, and sliced avocado
  3. Enjoy!
